Notes & Pairings
This wine has been on our dream list for a long while and we finally have room and budget for it. Everytime we taste it out of barrel we all look around and give each other the “woah” look. Given that we already work with Blaufränkisch from all over Hungary, Austria, Romania, Serbia, and Slovenia, this one simply hits different. The winemaking is straight-forward. 14 days on the skins, 16 months on the lees in barrel, and bottled unfined and unfiltered. Perhaps it’s the super high lime content of the Góre vineyard that lends some high toned acidity. Perhaps the long élevage in their cold cellar. Whatever it is, it feels like they soaked a cheesecloth filled with potpourri along with baking spices and dark ripe fruit. It’s relatively light at 12.5%, but it’s persistent and delicious.
