Dry Szamorodni is a very challenging wine category. Judit has only managed to produce such a wine twice in 20 years. About 15–20% of the grape clusters were affected by botrytis. After fermentation, the wine had an alcohol content of 16.5%. It was then aged it in barrels for 3.5 years without opening them. During this time, a yeast film developed on the surface of the wine. The alcohol level dropped to 14.5%, and approximately 20 liters evaporated from the barrel. The yeast film protected the wine from oxidation and preserved the botrytized character.
